Why are properties with certain statuses not in the feed?
By default it will only return 'active' sales properties i.e. those with a status of For Sale, For Sale and To Let, Under Offer or Sold STC and 'active' lettings properties i.e. those with a status of To Let, For Sale and To Let or Let Agreed.
To include additional statuses you will need to use the status filter and list the statuses you want, ensuring that you are using the correct status for the endpoint you are calling (sales/lettings):
?filter[status]=for_sale,sold_stc,exchanged,completed

Why can I not find land for sale in the feed?
To include 'land' in the results from the feed you need to explicitly request it using the include_land filter:
?filter[include_land]=true
